Firstly, with regards to the question on salaries, just be aware that these vary from country to country in the Middle East. I am not sure how much a lecturer would earn.
If you are lecturing in quite a niche field, you can expect to be paid quite well, especially in places like Dubai where there has been a growth in the number of higher education institutions. When negotiating your salary package, you should also see if the company offers any additional benefits like health insurance, accomodation allowances, etc.
Engineers are also sought after in the Gulf states. On average, a chief engineer can expect to be paid USD 10,834 per month but again, some countries will offer you more.
For expats looking to take up a job offer in the Middle East, I would recommend you read this article - A Comaprison of Expat Salaries in the Middle East. It will give you a good overview of what to expect in salary negotiations.
With regards to the question of safety for Hindus in Oman - Oman is one of the safest and most stable countries in the Middle East. While it is an islamic country and you might have difficulty practicing your religion, there haven't been any recent reports on any hostility towards Hindus or other expats. I think you'll actually find the Oman is quite a friendly country and you will fit in well with the country's large expat population.
For more information, I would suggest you read the Expat Arrivals pages on Safety in Oman and Culture Shock in Oman.
Best of luck moving to the Middle East.
