I'm considering going to teach in the Middle East, and Oman has become a possibility. I like the idea of it because it isn't as popular as Dubai, but I was just wondering how strict they are with Islamic customs there. Will I be able to walk around in Western clothes (within reason) or is it more like Saudi Arabia where I will have to cover my head?
If anyone has any advice, I'd really appreciate it.

Anonymous is right, Oman is fairly liberal - although you are still likely to have to make a few adjustments. See our Culture Shock in Oman page for more in-depth info.

Your best bet would be to look at the websites for universities in Oman, and check their requirements for international students.
You can start with the Sultan Qaboos University and work from there.
