The short answer is it depends on your lifestyle. I think you should be OK, but you probably won't be able to save too much if there are two of you. A large chunk of your salary is likely to go on rent, so you should perhaps try to negotiate an accommodation allowance with your employer before you move.

Your biggest expense when moving abroad is likely to be that of accommodation. You can get a one-bedroom apartment for around HKD 12,000-16,000 per month in the Mid-Levels Area, which is popular with the expat population.
If you buy local, food is cheap because most of it comes from China. If you want to buy international produce then it can cost double the amount it would in say, the UK.
The cost of transport in Hong Kong is reasonable and Hong Kong's public transport is excellent. A car is not needed here, unless you have kids that need to be transported around.
Ultimatley, the amount you save will depend on you lifestyle. There is a lot to do with your leisure time in Hong Kong and it is a shopaholics paradise - so you can understand how it is easy to splurge all your extra cash!
